Villa Macrina olive oil comes from cultivated olive groves in the ancient town of Gasperina high in the hills of Calabria.  Gasperina is a small town with Souther Italian Heritage found in its food and people.  The streets are narrow and lined with old buildings on cobble stone roads.  In the summer you can smell fresh oregano drying, chamomile leaves and perhaps some strong pecorino cheese nearby.  The people are awakened by the sounds of the frutta e' verdura vendor driving through the streets and calling to the people to make their orders from their balconies.

From those balconies most have a gorgeous view of the coastline.  The town sits on top of a mount 1.800 feet above sea level.  At the base of the mountain lies the majestic Ionic coast and beautiful seaside towns.  It is said that thousand of years ago the people of Gasperina would wait and watch for pirates from the top of the mountain.  When pirates would invade this area the Gasperinese would descend the mountain via underground tunnels so that they would make their way to the water and safety as the pirates were traveling up. 

But the altitude of the mountain was more beneficial to the people of Gasperina than just offering a pirate lookout.  The height of the town and it's geographical positioning, as well as its climate, make it a wonderful place to grow olives and grapes.  And that is where we get the delicious cold-pressed extra virgin olive oil of Villa Macrina.   The rich gold green color of this oil indicates its freshness and wonderful full taste.  It's best to try it first as the Gasperinese do: by using your finger to coat your bottom lip.  Get a feel for the flavor first, without the use of bread.  And be sure to always use this oil as a compliment to your food.

So enjoy the olive oil from the hills of Gasperina as the Macrina family has done for hundreds of years: with tomatoes and basil, on insalata mista, tossed with fresh pasta or simply with a good Italian bread.  No matter how you eat it, remember to take the time to enjoy the taste and remember the heritage of the people that make it.

Produced with Trebbiano grape must, then processed and aged in wooden casks of different sizes, according to old family traditions.  Well concentrated having all the flavors of all aging casks, which is has been "topped up" according to old traditions.
